To hit the ground running, you’ll need to know where you can park your truck. Your city will have guidelines as to where you can setup shop so be sure to start with your city hall for regulations on food trucks. Once you have all the necessary permits and guidelines set, you’re ready to start selling. Usually food trucks are thought to be at large outdoor events, like carnivals, concerts, and vendor fairs. But, since those aren’t likely to happen anytime soon due to large crowd restrictions, you’ll need to find other ways to guarantee visitors. To start, you can poll your usual patrons to see where the most convenient locations are for them. Maybe there are a few large neighborhoods or apartment complexes that you can cruise through. I know a few adults that would run after a taco truck in a neighborhood, myself included! Or, you can ask large office buildings or places of essential business like hospitals to book you to stay in their parking lot during specific time slots for their employees to receive a hot meal without having to leave work or venture to the dreaded communal microwave. Don’t think of yourself as a stationary restaurant anymore. You have wheels, so use them!

Allow Call-In and Online Orders

We can’t forget about social distancing, and there’s no doubt that the smell of your amazing food cruising through the streets will create long, crowded lines that can form at a moment’s notice. To help reduce the wait time and length of the line, allow customers to place call-in orders and have a separate spot for them to be picked up out of the normal line. These days people are looking for the most convenient and easiest way to get their meal with minimum touchpoints. I can’t think of anything easier than a food truck being parked in my neighborhood on a Tuesday night that I can call, walk to, and come back with dinner freshly cooked for my family all within a few minutes.

Reduced Fixed Costs

If you go all in and forgo your brick-and-mortar restaurant, you’re automatically going to save money by not having a mortgage or rent. Utilities will also be a lot lower than a stand-alone building. And, food trucks require a lot less staff to run. The areas are small, so having a few rotations of 2 to 3 employees is all you’ll need. Are you adding up all the savings yet?
